Gelato Beach skip is the hardest thing to learn starting out. It usually takes the longest out of all of the levels and can be frustrating to get consistent. On Twitch, I've seen some new runners get it in half an hour and I've also seen some take multiple hours and streams to get it once. The most important thing to remember is that it gets much easier after the first time you get it. It took me just about twelve hours, which is by far the longest I've ever heard of. As long as you stick to the setup it should come easily eventually.
It's also easier for some to learn from videos, so I'll leave multiple at the bottom of the page. Some runners give different advice, so if you're having trouble try another one.
I also recommed checking out tutorials 4, 5, and 6. They're different strategies that I've never tried but some people find them easier than the usual way.

--How it Works--
Gelato Beach takes the mechanics of rolling fruit and puts them in a very unusual position. Notice how whenever Mario interacts with a coconut it always pushes him, not the other way around. Using an extremely precise angle Mario can walk exactly toward the middle of the coconut so that it can't push him left or right. Once Mario is at the end of the roof, it's extreme tilt puts him below the coconut, and being the only way the coconut can move him, he goes down into the roof. The same principle works with the roof where a relatively equal amount of Mario is on either side of it so it can't push him out. The glass shine cage's hitbox only extends to the roof not into it, so we can bypass the wall altogether and go straight into the hole at the top.
--How to do it--
Once you have the coconut by the beach hut, there are a few different places you can ledgegrab to get the right angle. These are either post on each side of the pier leading up to the hut, the left railing, and the roof itself. Out of all the options I would suggest using the left pole. (1) Grab the ledge of the pole and before you climb up turn the camera to the left looking towards the reef and then press L to align the camera. It is very important to have the camera looking to the left before aligning it and it is always the #1 thing people forget. (2) Without changing the camera grab the coconut from where you left it. To do this, use single jumps and only move the control stick in mid-air. Any kind of walking around that is not straght forward will ruin the angle. If you have a good first party controller the Up notch on the left stick will be perfectly aligned. (3) Use a buffered spin jump or a triple jump to get onto the roof. (4) Bring the coconut to the dark line near the apex of the roof (see video) again without changing your angle and drop it. If you have a good angle you should be able to run at the coconut full speed. The speed at which you run at the coconut makes no difference if you run past it or not, that is entirely dependant on your angle. The faster you run the more likely you are to clip. (5) Start hovering when Mario clips in the roof with the control stick pointing Up. After this you will need to adkust your speed and slow down. Depending on your clip you can either hold neutral or even hold back a small bit. A great rule to follow is to have the yellow balls of the hover nozzle visible above the roof but not Mario's hat, and make sure to slow down as you get closer to the center, as the roof gets steeper. (6) Optionally, you can groundpound to get into the shine cage or just release hover. Using groundpound you have a higher liklehood of getting in if you are not exactly in the middle but it is in no way necessary.
Notes:
You can grab a fruit while watersliding.
Cataquacks (The blue duck things) will die if they run into a coconut on the ground.
Holding forward you can throw a coconut from the grass to the pier.
